Healthy Lunch: Black Bean Salad Wrap!

I have been very creative with my lunches lately. I want to eat healthy, but eat good too. For this Black Bean Wrap I mixed one egg yolk (boiled) with 1/2 tbsp of light Mayonaisse and 1 tbsp of Greek Yoghurt. Put in some chives, black beans and 1 tbsp of cider vinegar. Mash it up a little bit and add the egg white. Add salt & pepper and put on a Romaine Lettuce leaf. Looks good doesn't it?!
This way you don't need any bread and you get in a good amount of fiber and protein. If you find a way to substitute the mayonaisse, do so. Or just use greek yoghurt only. You can also use a different kind of vinegar. Be creative :-)
